I prefer circle hooks, just give the rod a gentle lift to set the hook as a sudden jerk is liable to rip the hook out of its mouth without giving it a chance to turn. As Cheater has said, that Baysports yak looks looks very similar to the Prowler kayaks which are a very good plastic yak design. I had one as my first kayak and you should have no dramas in WPB with it.

Fillet the inside of the bend first, then the outside should straighten up.
I find with whiting that are a bit bent in the esky they tend to straighten up once I've scaled and gutted them so maybe that will help with your pike.
