Caught anything lately? Post up how you cooked it here and if it was a success. Doesn't only have to be fish....

after 6 hours smoking and dehydrating.

if you want to know why jerky is expensive heres some figures

a 5.7kg cryovac lump of rump at $5.99 kilo

shitloads of seasonings including 2 1/2 bottles of soy sauce

6 hours to dehydrate and smoke it

the 5.7 kg of meat had 1.4 kilos of fat that gets thrown away

800gr has to much gristle, small amounts of fat and will be minced for burgers

200 grams of marinated jerky wouldnt fit in the smoker, i used three trays.

so 3.140 kg of meat in smoker, 6 hours later 1.320 kg of some of the best damm chilli jerky ever, its soooo adictive and really goes well with a beer or two.

Cheers Ghurkin

P.S. now to work out the correct beer to chilli jerky ration, guess Ill work on that now ;)
