Fish tacos are a favourite around here and easy to cook for lots of people or on the barbie. Snapper handles flavour well and I reckon it's much better cooked in smaller portions. Apart from the snapper, this is pretty much my wife's recipe, but you can sub just about any of it for whatever's in the fridge/cupboard. If you're not into or can't get Fennel, traditional coleslaw (or lettuce) is good also.

Ingredients;
Snapper filleted, skinned and cut into bite size chunks.
Salt and pepper rub. I have an asian style salt/pepper/chilli rub that I make up and combine with tempura flour, but salt and pepper with plain flour would work too.
Soft tacos. (you could use burritos or hard taco shells also).
Guacamole. Mash avocado with salt and pepper and a squeeze of lime.
'Slaw. Chop Red cabbage and Fennel, combine with dressing made from lime juice, olive oil and salt and pepper. (lime juice stops Fennel from going brown).
Fried Corn. Cut from the cob or use from the can or packet. Fry up with dried cummin, praprika and a bit of salt until it gets some colour.
Coriander
Fresh Lime
Hot Sauce of your choice. There's some good Mexican sauces on the Australian market now. The American grocery stores stock them.
Ice cold Corona

Method
Open and drink beer.
Coat Snapper pieces in rub and shallow fry in 50/50 butter and olive oil or on the barbecue.
Drink beer.
Warm soft tacos according to packet.
Drink beer.
Combine ingredients in taco with a squirt of hot sauce and a squeeze of lime.
Wash down with more beer.
Repeat.

Looks awesome Haynsie, i'm just missing the main ingredient ???
THE SNAPPER, i haven't opened the account yet this year, although it probably helps if you go fishing too i guess, between work and the band, i've only got out 3 times, all up my end of town.
That recipe though, looks the bomb.
