Snapper with chilli and kaffir lime mmmmmm

With such a poor showing in the "whats on the plate for tucker" section i decided i would be first off the mark with a meal i created on Monday night. Ok i will confess, the snapper is from a trip a week before chrissy that was in the deep freeze, anyway i decided to fillet the fish and skin it, i then cut the fillets long ways then in half, creating 4 pieces per fillet, next i made up the crumb mix and added the following, 2 finely shredded kaffir lime leaves, some chilli flakes we had in the pantry, some salt and cracked pepper, a bit of a coat in the egg then into the crumb mix, then into the the fry pan for a shallow fry. We had a salad and some boiled potato's, it was great.
