My 2 little squid in linguine

Caught anything lately? Post up how you cooked it here and if it was a success. Doesn't only have to be fish....

My 2 little squid in linguine

Linguine with squid, smoked salmon and chilli oil & cream.

I'm not one for a recepie and quantities but the base of this dish may inspire.

I make my own pasta,
This was a small batch and roughly 300g oo flour and 3 large genuine free range eggs
from my missus parents property.
I added a heaped teaspoon of garlic paste I blended up with olive oil salt and pepper
and a dash of lemon juice, also 2 teaspoons of dried flaked parsley and chilli,

I diced Finley, 1/4 a red onion a hand full of egg plant and a small hand full of mushroom.
The onion was cooked off slowly first, then the rest was fried up with 3 cloves of garlic crushed.
Once they were cooked well in butter and chilli oil I removed them from the pan,

The pan was set back to very hot with a splash of canola oil and 2 small squid hoods (from Mt Martha)
were very quickly added they had also been chopped to very small pieces to spread well through the dish.
The squid had been sprinkled with paprika flaked salt and cracked pepper.

The rest of the pre fried ingredients were added back to the pan along side 200mm of cream stired through. With some extra spring onion and chopped smoked salmon.

Topped with grated with parmisan.

That was dinner at about 10:30 last night.
I caught them Saturday arvo.
And had stuff on until after late night Xmas shopping Sunday night.
