Caught anything lately? Post up how you cooked it here and if it was a success. Doesn't only have to be fish....

Bambi Jerky

Friend of mine shot a deer and didn't know what to do with all the fiddly bits like ribs bones etc so I took them.
Spent 4 hours trimming all excess meat off the bones and removing most of the sinews and fat.
As they were all small pieces of meat I decided to make jerky.

About 1.5Kg bambi trimmed and sliced very thin
About 100 grams Worcestershire Sauce
About 200 grams Sambal Oelec
About 50 grams of good smoky scotch

Marinate 24 hours

Place on racks and put in smoker with hickory sawdust for 10 minutes then into cool oven (60 degrees) for 6 hours or until it breaks when bent.

Let cool and pack in ziplock bags.

Eat with cold Cascade Stout......

Nexty time will add more dried chilli and salt.

sounds bloody good Bozzie, Ive been making jerky for a few years now, always tastes good washed down with a cold beer. :up:
