When I crumb fish, I like to put lemon pepper in the flour, a squeeze of fresh Lemon and lime in the egg wash and for the crumbs I use stuffing mix with a sprinkle of dry parmasean cheese.

Watch that Lemon Pepper Daryl, some brands of it are loaded with MSG.

That's good to know Justo, just told the missus as she suffers from massive migraines and isn't allowed MSG and she likes lemon pepper seasoning. Might have to start reading the labels.

You can use salt & vinigar chips smashed up as crumbs too.

I have also heard of BBQ shapes crushed for crumbs, but might be overpowering the fish flavour a bit there I thinks
