Filleting, skinning and deboning flathead

I assume that most of you will be au fait with this. I knew how to fillet, skin and debone by cutting a 'v', but this explained how to debone by ripping really well. Hope it helps someone.

That's the way I do it. Sometimes the flatties are a little bit mushy and it doesn't work very well but most of the time it's the fastest, least wasteful way of cleaning them I have tried

Ripping the bones out with the skin works best when the fish are fresh, so do it as soon as possible after catching

Smaller fish I cut in front of the fins and use them for grip ripping the fillet away from the skin too, but much harder with a big fish.

Apart from that I've been using these methods for many years.

The ripping method is the only one i have ever used on flatties, but last night i tried it on summer whiting up here in a QLD holiday and it worked a treat.

As above... but f they aren't fresh leave them in the fridge or a slurry for a few hrs and they still work ok

Will definitely try this method next time i get a few flatties
Perfect little fillets for a beer butter and hot oil dunking

People really appreciate being presented with fish that is skinless and has no bones.
