Baked salt n vinegar pinkie fillets

Saw this recipe at the end of an “ADOS Addicted to Fishing” episode (YouTube). It looked good so I gave it a go and really enjoyed it. With snapper season here some of you might like it.

Ingredients:
2 parts all natural Greek yoghurt
1 part mayonnaise
Bag of good chips (red rock deli or kettle) in any flavour, I used salt and vinegar
Pinkie fillets skinned, ribbed and de pinned

Directions:

Lay fillets out on baking paper in a baking dish
Pre heat oven to 180 fan forced
Mix 1 part mayonnaise to 2 parts yoghurt
Smear thin layer of mix over the fillets (I went about 2-3mm thick)
Crush your chips in the bag but not so much that it becomes a powder, and pat it down on top of the mix
Bake in the oven for about 12 minutes.
Eat.

Sounds good, wonder how it would go swapping out the chips for corn chips, love using sour things on fish

Good mayo is almost all olive oil, just use that mixed with yoghurt.
Yoghurt will get the flavour into the flesh because of its acid content.
Watched Heston do some experiments with marinating and using medical imaging, the yoghurt penetrated deeper and faster than ordinary marinades.
Trivia over, back to cooking.

Give it a go robbo, you will love it! I don’t think you will have a hard time sparing a pinkie to experiment with after your last trip. It ended up tasting more like sour cream, and corn chips would work well too guys, that’s next on my list.

Yes I filleted the smaller one to eat with the kids over the weekend. I will save experimenting for another fish

I cooked some of the bream fillets from fish I caught at Bemm a couple of weeks ago. Used 1 snack pack of salt and vinegar and 1 pack of originals. Heated up the barbie while I dipped the fillets in egg and rolled them in the crushed chips. I cooked them for about 2 minutes a side. When I turned them over, the chips had browned to a nice golden colour. SCRUMPTIOUS. Even SWAMBO loved them.
