Rick Stien, for those who do not know is a great fish/seafood chef from Padstow, UK. I have a few of his books with my latest edition being his "Fish and Shellfish" book. Great looking book that has front section of different prep and cooking methods for different fish/sheelfish. Followed by sectioned book based on fish type. All recipes has a list of "Alternative Fish" you can substitute into the recipe if the fish of choice cant be bought or caught

Anyways, second time we've cooked up his Chargrilled snapper with Mango, prawns and chilli salsa. Great for that summer bbq with friends, a light lunch, or starter with friends
