So I have stocked the fridge with fresh fish and squid over the last week and what did I do with it.
Night 1 was whole pinkies on the BBQ. Really simple recipe. Gut, scale and clean the fish. Dry them off and spray or wipe with oil, then a good sprinkle of garlic salt and some pepper. Lightly scrunch up some foil and push it into the gut cavity, spread the wings and sit the snapper upright in the bbq over a low heat and close the bbq lid. Only takes about 30 min. If you rub some extra garlic salt into the tail it becomes crunchy to eat. Served on the plate still sitting upright, with potato gems and salad. Yum.
Night 2, a bit harder. I had 2 medium large squid and 3 small ones. Clean the bigger squid and leave the hoods whole. Place the fins, tentacles and cleaned smaller squid into a blender with some garlic, salt & pepper, lemon juice, white wine, bread crumbs and lemon juice. Blend until a fine and chunky consistency. Stuff the mixture into the whole squid, secure the end with a stick and then fry over a light heat in a frying pan with a lid for about 30 mins. I served with some stir fried vegetables. Lovely.
For those that watch “Iron Chef” on SBS I doubled down on the theme ingredient.
Night 3, trio of fish fillets - tomorrow night it will be a pinkie, flathead and whiting fillet each. Slight dusting of flour and lightly fried. Fresh, simple and a great way to enjoy the variations in flavour.
