Spicy Fish wrapped in Banana leaf

Spicy Fish wrapped in Banana leaf

This recipe goes very well with a beer/scotch and tastes great with any whole fish

Ingredients

1 whole fish cleaned about 600 - 1kg (put few slits through it)

2 big onion diced
1 big ripe tomato diced
1 tsp Chilli powder
1 tsp coriander seed powder or fresh coriander 1/2 bunch finely chopped
1/2 tsp Vinegar
1 sticks of curry leaf
1/2 tsp Ginger and Garlic paste
1/4 tsp Mustard seeds
1/4 tsp cumin seeds
2 tsp cooking Oil
Salt to taste

1 banana leaf or Aluminium foil

1. Heat oil in a pan and add Mustard and cumin seeds and mix and wait for 30 seconds to a minute for them to splutter(you will get a nice aroma)
2. Add the curry leaf and mix for 30 seconds, add diced onions and sort till golden brown
3. Move the onions to one side...add a tsp of oil and add the Ginger and garlic paste and fry for a minute to get rid of the raw smell
4. add the diced tomato, Chilli powder, Coriander seed powder, vinegar, salt and add 1/2 cup water and keep frying for 10 minutes stirring frequently till all the water is evaporated and the mixture becomes thick.
5. Now form a bed of this mixture on the banana leaf or aluminium foil and place the whole cleaned fish on top cover it on top with some more of this mixture and wrap it up. Pre heat oven in 200Deg for 5 mins and cook the fish in 180 deg for 20 minutes

Open the wrap and check if t is cooked, or can leave it little longer.Serve with a wedge of lime/lemon...Can be served with a few bread roll to go with it....Enjoy with a drink :D

had it cooked just like that (banana leaves) in cairns recently. was delicious, they steamed it though...
