How do you cook a Ray??

Caught anything lately? Post up how you cooked it here and if it was a success. Doesn't only have to be fish....

Seems to be a bit of interest atm in catching and eating rays (eagle, banjo) and was curious as to how people are preparing and cooking them?
I seem to recall hearing that skate used to be/still is sold as flake??

I lived and worked in Singapore for 4 yrs before. They love eating sting ray.
Fishing is just like Accounting .... it is all about Optical Illusion ...............

Had a look around various forums last week...as far as banjos go people take the tail section off where the flaps meet the body and fillet it like a flatty, skin it then cook it same as gummy.

Anyone tried something like this??

500 grams Stingray (pari) or eagle ray fin, choose flatter fillets nearer the fins
4 cloves Garlic, peeled
1/2 Spanish onion , peeled
1 tablespoon Chilli paste
2 stalks Lemon grass (serai), blended
1/4 teaspoon Ground turmeric
1-cm piece Prawn (shrimp) paste, dry-roasted
(sambal belacan)
1 tablespoon Tamarind paste
20 grams Dried prawns (shrimps) , dry-roasted and pounded
1 Lime, juiced
4 tablespoons Vegetable oil or olive oil
Sugar to taste
Salt to taste
Banana leaf or foil
Garnish
1 Lime, juiced
2 Kaffir lime leaves, thinly sliced
Coconut cream (optional) for drizzling
Cut stingray fillets into thin slices lengthways so that thin fillets are obtained. Blend remaining ingredients into a paste. Heat oil in a pan and fry blended ingredients, allowing paste to slowly mature on low heat. Place banana leaf and fish on oiled grill. Brush fried paste onto fish and grill or BBQ for 5 minutes. If the fins are thick, cook for another minute. Turn over and add more sauce and lime juice before taking off the BBQ.Snip off burnt edges of banana leaves, slide out fish from BBQ and serve on same banana leaf. Garnish with kaffir lime leaves and lime juice. Drizzle some coconut cream (optional).
Serves 4 when served with a meal

I go to Singapore every couple of months for work and as Steve mentioned, they love it.

If you're ever there, head to the old markets (they close a road and it becomes a huge open air dining area with old school vendors down the length of the road) - they cook it on a hotplate in strips, on skewers or larger fillets coated in asian spices and sauces. They will show you how to do it so I will remember to pay more attention next trip. Chilli ray is awesome! :up:

Head into a Chinese Restaurant and ask them as many use a cookie cutter to punch out "scallops" being either ray or skate flap!!

At the prices you pay in some of those places that really sucks!
