Something different - smoked squid

Caught anything lately? Post up how you cooked it here and if it was a success. Doesn't only have to be fish....

Had the calamari and cuttlefish for dinner tonight. The hoods, scored and cut into pieces went into a steamboat for dinner. (for those not old enough to know what a steam boat is, google it) Suffice to stay that was a magnificent feast in itself (threw in a few green prawns in as well).

But I had the tentacles and wings left over, so what to do. I pulled out the smoker and threw the squids into a brine mix (water, salt, brown sugar, lime juice) for 3 hours, then aired dried it on the smoking rack for an hour, then into the smoker for 15 minutes.

The result was splendifourous, although I had just had dinner so it was only a taste, before I decide what to do with it which went into the fridge until tomorrow. Also did the same with some thresher that was sitting in the freezer, that will be pate' tomorrow.

Interesting concept Pete, thought smoking may dry it out and make it tough when I first read the heading, sounds like it worked out for you.

Not tuff at all Eddie because it cooks cool and only for about 15 minutes. It won't be everyones cup of tea but certainly worth the experiment. Cut into pieces and served as an appertiser with a squeeze of lemon and cracked pepper would do it justice I think.
