Tempura

Post by wokka1 »

First crack at some tempura squid tonight. Fail. Recipe was followed, water was cold, oil was hot, taste was fine but the coating was way too thin. Either i had the batter too thin (recipe said it needs to be thin), or it was because i didn't coat the rings in flour before battering. (Like i do with the beer batter). Any thoughts ?

Are you using normal flour? I thought Tempura batter uses some different mixture. Don't quote me on it. Wife ends up buying those tempura mix from asian grocery store, as she tried afew time as well and didn't work.
