So guys caught my first legal pinky/snapper today
I have gutted,gilled and scaled it but wanna see what people think is best way to cook them

Feeding it to the cat comes to mind ---
smaller fish up to 40 cm I just fillet them and egg and bread crumb shallow fried
any over that I give away , not that I target them much after the Tea Tree comp

Oven baked in foil with lemon grass, chilli, butter etc

Really feed it to the cat?? I thought these were a targeted fish in Victoria due to
Tasting good?

They can be crappy if cooked wrong, like I said oven baked, on the BBQ or steamed is delish

Maybe I'm a one trick pony but I'd mix some chunky garlic paste & butter together and stuff the sucker...Foil... Oven...Mouth

Orange juice and garlic is another goody. Just wrap in foil and bake in oven at 180 for 20-25 minnies.

Sounds like it got heavily over cooked. Try it in the fry pan whole fish one side at a time with butter or oil on medium heat. Cook until the flesh begins to change colour then flip and do the same on the other side. Get it on a plate quick to complete cooking with the residual heat and it should be beautiful and tender. This is a good way to learn cooking times then graduate to foil.
I thought I got a bite...........but it was just a bit of weed.
