Harvested some tailor and Australian salmon during a trip to Tamboon and decided to turn them into Thai-style fishcakes. The recipe I used was really simple:
1 kg rough chopped fish fillets
1 cup coconut milk
2 tbsp brown or palm sugar
3 tbsp of a good red curry paste
3 spring onions
4-5 kaffir lime leaves
1/4 cup bread crumbs
Finely chop the kaffir lime leaves and spring onion and throw everything in a food processor. Dont make the mix too fine, just make sure the ingredients are well mixed through. Alter the consistency with more breadcrumbs or coconut milk if required.
Make into medium patties and shallow fry in peanut oil.
You can add more or less curry paste depending on how strong a flavour you want.
