Sunday BBQ dinner
Scored around the edges of the fish and a few slices through the body, sprinkled it with ground coriander, cayenne pepper & garlic salt. BBQ for 45 mins upright, sitting on a piece of foil to stop the bottom burning and it was served with an Asian style salad. Yum.
Well past the edge, almost at the point of no return.

Tasty looking Fish Mav, did you have a BBQ lid on it while it cooked?

Yes and with 3 burners on low. Think the temp was about 140* (ish) for most of the time. The scoring allows you to see if it is cooked through to the bones. The flesh just fell off the bones and remained really moist and the skin is crunchy.Yacker wrote:Tasty looking Fish Mav, did you have a BBQ lid on it while it cooked?

Didn't post this recipe, but seeing as you are talking about breakfast.
The snapper fillets I smoked, I heated them in the microwave, placed them on toast, topped them with a poached egg (from my chooks in the backyard) and then a healthy squeeze of lemon juice, "snapper benedict". You could always use the packet hollandiase sauce (which isn't that bad) but I went the healthy option with the lemon juice.
