I. decent fish 60-70cm Snapper
bag of heat beads and firelighter (not the cheaparse brand)
bunch of mixed herbs fresh,coriander,thyme,basil and mint 2 cups
500ml coconut milk or cream.
3 tablespoons of red or green curry paste.
6pkt of your favorite beer.
Fire up the webber with headbeeds,to speed up the process use a hairdryer or heat gun.
Gut and scale whole snapper with 3 slits down the side.
Stuff insides with herbs.
Mix curry paste and coconut milk together and pour over the fish which should be in a foil tray.
Thats it.
Place in webber with lid on for about 1 hour depending howmany woodducks keep taking the lid off.
Oh the 6pkt of beer thats for kickin back with friends while you sniff in the sweet thai flavors of a juicy sweet snapper.

Looks good Bomber - will try it tonight. Fortunately (or maybe unfortunately for Pearcy) the main ingredient for the dish is ready & waiting in the fridge!!

Can do Bozzie,also chopped red chillies and cracked black pepper.
But I serve it normally with fresh lemon juice.
