Smoked Gummy, Elephant and Salmon

Smoked Gummy, Elephant and Salmon

Couldn't help myself, so I have marinated some pieces of Gummy, Elephant & Salmon overnight in a brown sugar, salt, smoked paprika & water marinade. They should be hitting the smoker tonight at about 6. Stand by for a review.
Well past the edge, almost at the point of no return.

I smoked some of my gummy as well and was suprised how good it was. Just don't over do it or I think they would get a bit dry, as they don't have much fat in them.

I waited for you Ghurkin, but it was getting cold so I started without you.

All I can say is magnificent. The gummy and elephant had a mild fish taste, but no ammonia or anything else - it was really nice. The salmon as always has a great taste, a lot fishier but that is how I like it. The marinating overnight really kicked the flavour along.
