Pinky two ways

Sunday night, marinated in fish sauce, kafir lime, lemon grass, ginger, garlic, sugar and chucked on a hot grill. Beautiful.
Monday night, boneless, skinless fillets deep fried in beer batter served with potato fritters and Mums' home made tomato sauce. Speechless. First time i've made batter and deep fried my own fish. It didn't make it to the dining table, got scoffed on the kitchen bench.

yum...you're making me drool....beer batter is the BEST....I love calamari rings in beer batter deep fried for 30 seconds....!!!

I'll have a chat to mum. From memory, tomatoes, vinegar, sugar, cloves, half a day and a moulie mill.
