I think the fish market is rife with that sort of thing. People think whiting is whiting but it can be whiting from overseas too. We are no better, how many names do we give to fish? What is flake...gummy, school, elephant fish? Heck, even our salmon off the beach isn't salmon but a type of mullet. ...

Sounds like it got heavily over cooked. Try it in the fry pan whole fish one side at a time with butter or oil on medium heat. Cook until the flesh begins to change colour then flip and do the same on the other side. Get it on a plate quick to complete cooking with the residual heat and it should be...
