Redfin fillets

I am an amateur at gutting and cleaning fish and this Youtube clip meant that I had 6 almost perfect fillets, rolled lightly in seasoned flour and shallow fried. I honestly think Redfin might be my favourite fish to eat.

1. That's a good reddie by any standard
2. An easy way to get 2 good fillets
3. Fresh water fishing means less washing of gear
4. Fresh water fishing means more flies! Ggggrrrrrrrr!

PS Will this work for any other species, or are there some peculiarities with the structure of redfin?
PPS I found this one ages ago and was impressed by the deft knife skills.(I guess a very sharp knife helps)
