Well i can help for that too. I had a smoke salmon buisness before. They where only 2 compagny"including mine" over all of australia doing cold smoke process
Got a few good recipe too for all different fish and seafood i can fish spearfish or collect;)

Shane if you ask me to many recipes you end up as chubby as i am
But i ll gladly share them
